freshalicious ™ Eat Fresh. Eat Local. Eat Healthy. Ten years ago, Stacey Fokas gave birth to her first daughter, Anastasia. Anastasia was born anaphylactic, or severely allergic to milk protein and, as Fokas and her husband soon found out, it was not just milk she was allergic to, but also eggs, olives, olive oil, tomatoes, lemons and sulphites. The Fokas family immediately began changing their lifestyle and eating habits to meet Anastasia’s dietary needs. Stacey began reworking and testing old recipes by eliminating the dairy products and sourcing the ingredients from her local community. “Cooking and baking have always been hobbies of mine,” said Fokas. “I grew up in a family of great cooks, and every social event was centered around food.” Following her success at home cooking “tasty” dairy free meals, Fokas’ daughter began encouraging her mother to write a cookbook so that Fokas may help other families struggling with similar allergies. “I felt as though it was my responsibility to turn this negative food allergy into a positive experience,” explained Fokas. “I have enjoyed sharing and compiling my recipes and food journeys in my cook-book, freshalicious. ™” Fokas was referred to Sharon Martin-Toussaint, sales representative for Brown Printing Company, by a friend and client of Brown’s, TFP Media Inc. Freshalicious ™ began printing with the support of Brown Custom Services, Brown’s specialty print-ing division, in July of 2010, and can be found in specialty Chapters/Indigo, small book stores, grocery stores, health food stores or by visiting Fokas’ website at freshalicious.ca . “Stacey is a real ‘go-getter,’” stated Martin-Toussaint, “if there is an obstacle, she doesn’t go around it, she goes through it. This characteristic is evident in the pub-lishing of this cookbook,” added Martin-Toussaint. “And by the way, her sugar roasted ginger carrots are to die for!” Brown Custom Services utilized one of their trusted vendors to produce Fokas’s unique, hardcover cookbook.
